Cilantro Enchiladas

Hi all! A few years back I had a craving for enchiladas so I took what I had in my pantry and my fridge and made these tasty things! My husband (b/f at the time) LOVED them...I think I totally impressed him that I didn't use a recipe. ;)

He has since requested them on a regular basis.  Since they are so easy to make, I never mind whipping them up.  (warning, they are not the least bit healthy/low fat)

Since I don’t use a recipe I’ll do my best to step you through it. Some of the things I don’t measure so use your own judgment.

In large stir fry or sauce pan, saute a chopped purple onion, teaspoon chopped garlic, chopped cilantro (I usually use the entire bunch without stems) and 3/4 stick butter. (Sometimes if I have it, I'll add the store bought pice de gallo in addition to the onions and cilantro)  After about 5 min, add 1 can cream of onion, 1 can cream of mushroom, 1 small can chopped green chilies, 10 oz sour cream, and grated cheddar (about 1 cp, maybe more). Stir everything together until looks soupy. If too thick add a little chicken broth. Season with salt/pepper or garlic salt (optional).

In separate mixing bowl, open and drain 2 cans white meat chicken breast (next to the tuna in store), break up chicken for a shredded consistency. Pour in 1/3 of your sauce/soup mixture into chicken. Mix. Spoon mixture into flour or corn tortillas, roll and place into “PAM sprayed” 9x13 casserole dish  (usually makes 10-12 enchiladas).

Pour remaining sauce over enchiladas, cover with grated cheese, bake on 350 for 35 min.

These are seriously so good and really hard to mess up.  If you like cilantro, you will love them.  If you don't care for it, don't add it and you'll have yourself some really tasty sour cream enchiladas!

Snips&Snails & PuppyDog Tails...thats what little boys are made of!

Excited to post about my own childs party!!! My little guy is in love with dogs and so I thought it would be a little unique to do the theme, Snips & Snails & Puppy Dog Tails for his 1st Birthday!  My first project was to get things together for his 1 yr photo shoot.  Here are some of the props I was able to put together:









Then came the actual party! I def wanted to make it fun and cheery since it was a first birthday so I used all the bright greens and blues I could find! I think it was a success!

Lazy cake cookies

Eggs & Melted Butter
Cookie Dough
These have to be the easiest cookies! They are true to their name when they say "lazy" cake cookies.  Another 20 minute dessert that everyone will love!  Chances are, you will already have all the ingredients in your pantry.  You will need:
Preheat oven to 350
2 Eggs
5 Tablespoons butter
1 white or yellow cake mix
1 bag of chocolate chips

Simple melt the butter and add your 2 eggs.  Whisk together; add cake mix and chocolate chips. Mix together like normal cookies.  (Now the recipe I was following said to put them in a 9x13 pan and bake them into like a cookie bar.  This did NOT work well for me; the batter was much gummier and much more sticky than regular cookies or cake so "spreading the dough in pan" was not as easy as it sounds.  I quickly nixed that plan)  I spooned them onto a cookie sheet and stuck them in the oven.  They need to be spread out just like regular cookies, as they don't seem to rise as much as I thought they might.  Bake them a little under 20 minutes and you will have yourself some REALLY soft and yummy cookies! Everyone will want to know your secret.  Even my husband wanted to know how I got them so "fluffy and soft".  Enjoy!

'Knock your socks off' S'more Bars

I have another GREAT, FAST, and EASY dessert for everyone! I'm a broken record when I say this BUT this is a MUST try!! The hubby needed a dessert he could take to work and I knew they would need something they could hold and not need a fork for.  This worked perfectly and he said all the guys raved about them and there wasn't a crumb left! Give 'em a try next time you have 20ish minutes!
So they are actually called Caramel S'more Bars  Here is what you need and do:

Graham Crackers
Semi-Sweet Chocolate Chips
Milk Chocolate Chips
Mini Marshmallows
1 cup brown sugar
2 sticks of butter
Chopped nuts (optional)
Preheat oven to 350
Spray 2 cookie sheets with baking spray, break your crackers in have and simply lay them on your baking sheet.  They don't need to be perfect and not all need to be touching.

Mix have your bag of semi sweet chips with half your bag of milk chocolate chips.  Sprinkle the entire mixture evenly.
Add your marshmallows on top of that.  Use as many as you want.  This is also the time to add chopped nuts if you chose.  In sauce pan, you will want to pour in your brown sugar and the 2 sticks of butter.  Cook on medium heat until it starts to boil.  You will know this is done when the butter and sugar become one.  (they will stay separate for the majority of the time.  When this is done cooking, drizzle heavily over your bars.
Place in oven at 350 and bake until marshmallow's turn brown.  It will be no more than 20 min.
After they are finished, you will need to let them set and cool at least a couple hrs before you start to cut them in bars.  If you can store in the fridge for a bit, that is actually best.

Strawberry lemon bars

Last time I tried these, it was with raspberries. This time I had some cut up strawberries and my husband had been asking for lemon bars so I decided to experiment again. They def turned out better this time!
Put your berries in a food processor and work them through until you have about 3/4 cup. Do not drain.
Follow recipe on lemon bar box EXCEPT do NOT add the water they are asking for. You will get plenty water from your fruit.
Follow all other directions as listed on box. Add the fruit when it asks for the water. Bake at same temp and for the longest time shown. Tada!

Don't forget to sprinkle the powders sugar!

"Easy as pie" chicken...

This has to be the easiest chicken to make!! And for as easy as it is, it's very tasty!!
You see in the photo that I'm using the Philadelphia cooking cream again! This stuff is so awesome! Pick any flavor that sounds good to you and just spread it on raw chicken breast pieces. No need to add any other seasoning, the cooking cream has plenty flavor. To add some crunch, I throw on some fried onion pieces, stick it on a baking rack and slide it into the oven. Back on 375 or 400 for atleast 35 min, then start to check your chicken to see if it's still pink in the middle.
I can't say enough how easy this is and it's so yummy! We were so excited about digging in, I forgot to take a picture of it when it's done.

Cute As A Button BABY SHOWER

As me and my DIY Partner in Crime Say, "Another notch in our belt, another success!"

We recently gave a "Cute as a Button" baby shower and I must say, it really was, Cute as a Button" !


These might be the most simple invitations we have ever made but they were just perfect for our little shower!
Of course my Cricut machine worked its magic! This banner was very easy to make, just be prepared to use a lot of paper! I love having my mantle to hang things!!
Diaper cakes are always a must!


Wishing I could take credit for these tiny cakes because they tasted like a dream! They fit in perfect with out little buttons and they were a huge hit!
